Sibillino is clear and golden orange and smells minerally and intensely of overripe peaches and ripe tropical fruits. The wine has light prickly tannins and a fine taste of unripe pineapple, tart apples and ripe peaches which transformes into a long aftertaste with a slightly mineral notes. The wine tastes dry with a balanced acidity.
This orange wine is made from 100% pecorino, which is mainly used in the regions around Umbria. It’s spontaneously ferments and has 10 days of skin contact. The wine is then stored in steel tanks for 9 months. No sulfur is added.
